THALASSERI DUM BIRIYANI




 Who doesn't love a plate of BIRIYANI?? I think it doesn't need any introduction....Its heavenly
and one of the most Delicious food around the world.....
 It is believed that the Mugals introduced biriyani to North India for the first time whereas
Arabs to southern India. In my childhood my mom used to give me
varieties of Biriyani like Chicken biriyani, Hyderabad biriyani, Dum biriyani.....From that l love Dum
biriyani the most.. And we children eagerly wait to take the Dum and putting into the plate.
.....The smell that coming out...... "nte saree"...
When l started to study kannur,l got a chance to eat THALASSERI DUM BIRIYANI .....After return
home l pleaded to my mom for making that biriyani....so l wanted to share this with you...

THALASSERI DUM BIRIYANI

Ingredients for chicken Masala

 Chicken (skin removed)- 1kg
 Dalda- 3-4tspn
 Sliced onion- 2 cups
 Garlic- 1/2 cup
 Chopped ginger- 1/2 cup
 Green chillies- 5-7
 Turmeric powder- 1/2 to 3/4 tspn
 Special THALASSERI biriyani Masala - 1/2 tbsn
 Rock salt- as required
 Tomatoes- 2
 Chopped coriander leafs- as needed
 Fresh mint leafs- as needed
 Yogurt- 3tbsn
 Lime juice- 1tspn
 Ghee- 2tbspn
 Fried onions- 1/2

For the Rice

 Jeerakashala rice- 4cups
 Water- 6 cups
 Ghee- 3-4 tbspn
 Cinnamon- 3 small sticks
 Cloves- 12
 Cardomom pods-6
 Star anise-1
 Fennel seeds
 Salt:as needed

For special THALASSERI biriyani Masala powder

 Cloves- 3
 Cardomom- 3
 Fennel seeds- 1tspn
 Black pepper- 1/2tsp
 Jeera- 1/2 tspn
 Nutmeg- 1/4 tspn
 Poppy seeds- 1/2 tspn
 Red chillies- 2

For garnish

 Oil/ghee- 1 tspn
 Fine sliced onion- 2 cups
 Cashew nut- hand full
 Golden raisins- hand full
 Fresh coriander leafs

For DUM

 Rose water-1/4 cup
 Turmeric powder- 1/3 tbspn
 Fresh coriander leaf-handful
 Special THALASSERI biriyani Powder- A sprinkling
 Ghee
 Wheat flour- a little to make dough
 

Method

  1. Clean and rinse the chicken piece,Rub with salt and clean again,keep drain.
  2. Prepared fried garnish as well as chicken Masala powder.Also chop and slice the vegetables.
  3. Crush garlic,ginger,green chillies to paste.
  4. ln a cooker add dalda
  5. Heat on medium flame until melt
  6. Add sliced onions,paste of garlic, ginger chillies.
  7. Saught this until the raw smell disappear.
  8. Add chicken pieces and Mix well.
  9. When chicken turned white,add special THALASSERI DUM BIRIYANI powder.
10. Toss well to distribute evenly.
11. Also add rock salt and chopped tomatoes.
12. Add fresh mint and coriander leaf, Followed by yogurt and mix until it disappear.
13. Pour lime juice over Masala.
14. When nasal is simmering cover and cook for 10 min
15. Open & add ghee
16. Cover again and cook for 5 min,The gravy started to thicker and chicken to tender.
17. Gently remove the pieces from the gravy.
18. Reduce the remaining gravy By simmering till thickened.
19. When gravy became thick,add coconut cream.
20. Return the chicken pieces to gravy,stir well.
21. Turn off the Heat.
22. When cool down take half of fried oninons and crush with hands and mix with gravy.
For rice
1.  Rince the BIRIYANI Rice once,Drain,add spoon if salt and rub into rice,Scrub the Grains thoroughly.Rince 3-4 times.
2.  While chicken Masala is being cooked we can start rice preparation.
3.  Bring water in a pot.
4.  Add ghee stir.
5.  Add the drain rice and stir.
6.  Bring back to boil and add other spices and salt.
7.  Cook up to rice is cooked.
8.  Fluff up the Rice with a fork.

For garnish;
1. Heat ghee for frying onions.
2. Add finely sized onion and cook up to 8 min.
3. In the same oil fry cashew,Golden raisins.
 
For talasseri Masala powder;
1. Add all spices and red chillies to a pan. Toast on medium flame.
2. Grind the toasted spices. 

For DUM;
1. Mix Rose water with turmeric and put aside.
2. Greeze the bottom and sides with ghee.
3. Add chicken Masala and gently move the Chicken aside.
4. add rice over Masala.
5. Gently press the Rice layer.
6. Drizzle some ghee and rise water.
7. Sprinkle fried Onion and biriyani Masala powder.
8. Top with remaining rice,drizzle ghee,Chopped onions,cashew, golden raisins.
9. Mold the wheat flour dough into thick rope. Press all around the pot.
10. Place pot over a flat pan,And medium flame for 10-15mnts.
11. Allow to rest for10min,Later cut through the hardened dough and open lead.
12. Fluff up rice on top,Without touching the Masala.
13. Remove the rice to another pot.
14. Serve Masala and rice with desired proportion and sprinkle fried oninons.

 Serve with salad and pickle,enjoy....
